Our 100% Ibérico Acorn-Fed Pata Negra Lomo is cured in natural drying rooms with selected spices and exactly the time it needs. Nothing more than that.

Paprika balances the natural sweetness of Iberian pork, smoky notes appear on their own and the long finish does the rest. Thinly sliced and packed at the right moment so nothing gets lost along the way.

Some people serve it as a shared aperitivo. Some eat it alone, standing up. Both are right.

Breeding and Feeding

The secret of our 100% Ibérico Bellota Loin - Pata Negra lies in our purebred Ibérico pigs. Fed with wheat, barley, and sunflower seeds during their first months, they are then released into the extensive Salamanca pastures. From September to January, the pasture floors are filled with acorns and other wild fruits. Our pigs travel more than 10 km a day in search of these delicacies, infusing their meat with the aromas of the dehesa. Cured for more than 3 months in natural drying rooms, this 100% Ibérico bellota loin is a true taste experience.
