Pata negra ham and shoulder, 100% Iberico bellota

Pata negra ham comes from pure-bred Iberico pigs, raised free-range and fed on acorns during the montanera. At LOLO, you'll find both ham and shoulder, whole or in ready-to-serve 80 g packets. Here's what makes each one different, so you can choose wisely. Though choosing both is perfectly reasonable.

Pata negra ham: frequently asked questions

Is every acorn-fed ham pata negra?

No. Every pata negra ham is 100% Iberico bellota, but not every acorn-fed ham qualifies as pata negra. Ham from cross-bred Iberico pigs carries a red seal. Pure-bred 100% Iberico bellota carries a black one. For once, the colour coding actually makes things easier.

Is your pata negra ham hand-carved?

Ours is. Our 80 g packets of pata negra ham are carved by hand by a maestro cortador. The 80 g shoulder is thinly machine-sliced. If you order a whole piece, the carving is up to you. Along with deciding who's getting the first slice.

Why does sliced ham cost more per kilo?

Because you're not buying quite the same thing. A whole ham includes the bone, rind and outer fat. An 80 g packet contains only ready-to-eat slices, carved by hand. Less work for you, and no bone to deal with. That convenience is reflected in the price. The full breakdown: what a pata negra ham really costs.

How do I store an opened pata negra ham?

Keep it on its stand in a cool, dry place. After carving, cover the exposed surface with some of its own fat and a clean cloth. Before carving again, remove any dried surface layer. Cutting a little regularly helps keep the exposed meat from drying out. More in storing a started ham.

Can I give pata negra ham as a gift?

Absolutely. You can gift a whole 100% Iberico bellota ham or shoulder. For something easier to share, the ¡Vamos! box brings together different Iberico cured meats in ready-to-serve 80 g packets. A rather good way to avoid arriving empty-handed.
